Itacate is an independent publication that presents a distinct perspective from the typical food magazine. Rather than focusing solely on recipes or trends, the project centers on what can be described as critical gastronomy. It explores the cultural, social, and historical contexts behind food with a keen eye for meaningful and often overlooked stories.
Each issue seeks to uncover the deeper narratives embedded in everyday dishes, highlighting the voices, processes, and traditions that shape them. Itacate invites readers to consider food not only as nourishment or pleasure, but as a lens to understand identity, memory, and community.
